    What's in my vegetarian fridge? Hi my foxes! As requested, here's a peek into our fridge, of course the exact contents changes regularly, as foods come in and out of season and your menu changes. But generally it looks something like this. Plenty of vegetables for steaming or cooking stir-fry in our wok, salads, etc. Fresh fruit, berries and dates for snacking and treats. Water is our main beverage of choice. But it's great to have other options such as fruit-infused water, mineral water with a splash of lemon or juice, coconut water (ideally fresh from the coconut, but that's not always an option), coconut milk (I use for making chai coconut lattes or smoothies), green tea (I usually make at home from tea bags, but having a cold bottle to grab on the go is handy when you're in a hurry...

Going back to school has never been easier. These easy and healthy lunches are also perfect no-Heat Lunches You Can Bring to Work, or as an easy light dinner in your dorm room. Vegan Egg Salad Sandwich: The main ingredient in this vegan sandwich is tofu. If you’re thinking "tofu is out of my comfort zone", or the idea of raw tofu scares you, don't worry- I tested it on all my friends and they couldn't believe it wasn't eggs! In this recipe, the tofu is replacing the egg, and we are using black salt to get that signature sulphur egg flavour. and the mayo is just vegan mayo! This tofu egg salad sandwich also uses fresh herbs and celery, and is placed on toasted whole grain rye with sprouts and tomato. This vegan and vegetarian chicken salad sandwich recipe uses mock chicken, available at most health food, or healthy grocery stores and larger well-stocked grocery stores. I also used vegan mayo here, but you could also use avocado if you wish. I served this vegetarian chicken salad on a bed of lettuce, cucumber, and tomato. You could also serve it on top of a fresh salad if you're gluten free. Roasted Sweet Potato & Hummus Sandwich: The flavour combinations of this sandwich are incredible. Roasted slices of sweet potato, roasted red peppers, fresh, crispy basil a mound of peppery alfalfa sprouts, and chewy whole-grain rye bread to hold it all together. Take about 1/3 of the tomato and red onion in a small container and keep that in the fridge for lunch the following day. Then take the remaining tomato, the cucumber, mint and the rest of the red onion and add it to one of the containers of quinoa with the lemon juice, olive oil, salt and black pepper. Mix well. --------------------------------------------------------------------------------------------------------- TUESDAY’S LUNCH/IDEA NO. 2: QUINOA & BLACK BEANS WITH GUACAMOLE AND CHEESY CORN: 1 small corn on the cob Nutritional yeast: http://amzn.to/2aAZ8MM 1/2 can black beans 1/2 avocado 1 tbsp lemon juice 1 tsp chilli flakes Salt & pepper - Nakd Salted Caramel Nibbles: http://amzn.to/2cXpDCj - Fresh fruit Boil the corn the night before, leave to cool then wrap in tin foil, sprinkle over some nutritional yeast for a cheesy flavour and store in the fridge overnight. Then in the morning, take the second container of quinoa and the rinsed, drained black beans. Today’s video is all about vegan meal prep and making sure your packing healthy lunches and making easy healthy dinners! I'm super lazy and so I meal prep once a week for my Monday to Friday meals. I hope this video inspires you to create your own versions of a rice bowl and easy roasted veggies. It's essentially the practice of spending an hour or two every week making huge batches of whole grains, proteins, veggies, and snacks. Doing this will cut down on the amount of time you spend on thinking about and prepping your meals, and will make it easier to enjoy tasty, clean, home-cooked meals all week long. Healthy grains like brown rice and quinoa are a good base for many healthy meal ideas, and can even add some bulk to salads. I like to cook up a big batch once a week so that I can build meals all week long. Make sure to wash and chop up all kinds of fresh veggies for the week. I like to marinate them to cut down on dinner prep time. You can use these veggies for stir-fries, rice or brain bowls, and easy weeknight dinners. RECIPES... Easy Mexican Burrito Bowls 1 cup brown rice 2 cups water 1 can cooked black beans, drained and rinsed 1 tbsp taco seasoning Sea salt and pepper, to taste 2 red peppers, diced 1 1/2 cups corn 1 small red onion, diced 1 pint cherry or grape tomatoes 1 avocado, sliced 1 lime, juiced Heat a medium saucepan over medium heat and ddd rice. Add 2 cups water and season with a pinch of salt. Bring to a boil, reduce heat to low, cover, and cook for 40 mins, until rice is tender. Remove from heat and let stand, covered, for 5 mins before fluffing rice with a fork. Place lime juice in a small bowl and add avocado slices. Gently shake the bowl to cover the avocado completely with lime juice. Fold in beans and taco seasoning and season with salt and pepper to taste. Prep your 4-5 tupperware containers and divide the bean and rice mixture between them. Evenly divide red pepper, corn, red onion and tomatoes between all the containers. Top with avocado slices and seal containers with a lid. Enjoy hot or cold with a side of hot sauce or salsa for lunch! Marinated Roasted Veggies ¼ cup olive oil ¼ soy sauce or tamari ¼ cup water 1 tsp chili powder 1 tbsp ground cumin 1 tbsp minced garlic 2 tbsp toasted sesame oil 1 large spanish onion, cut into half moons 6 baby bok choy, trimmed and leaves separated 1 head kale, chopped into bite size pieces 4 carrots, peeled and cut into bite size chunks 2 pints mushrooms, sliced 2 red peppers, sliced salt and pepper to taste In a small bowl whisk together olive oil, soy sauce or tamari, water, chili powder, cumin, garlic and sesame oil. Set aside. In a large tupperware or bowl, or 2 heavy-duty freezer bags; add veggies and toss with marinade to coat completely. Place in the fridge and allow to marinate for at least 1 hour, and up to 5 days. To cook in the stove: Preheat oven to 450F. Line a baking sheet or roasting pan with foil or parchment. Spread the veggies (with the marinade) evenly onto the pan. Roast for 40 minutes, stirring every 10-15 mins, or until kale is crispy and carrots are soft when poked with a fork. To cook on the BBQ: Preheat grill to medium heat. Remove vegetables from marinade, and place in a grilling basket (or wrap in aluminum foil if you don’t have a basket). Cook for 15 minutes, or until tender turning often to prevent burning. Season with salt & pepper to taste. Serve with your veggie protein of choice. What's in my vegetarian fridge? Hi my foxes! As requested, here's a peek into our fridge, of course the exact contents changes regularly, as foods come in and out of season and your menu changes. But generally it looks something like this. Plenty of vegetables for steaming or cooking stir-fry in our wok, salads, etc. Fresh fruit, berries and dates for snacking and treats. Water is our main beverage of choice. But it's great to have other options such as fruit-infused water, mineral water with a splash of lemon or juice, coconut water (ideally fresh from the coconut, but that's not always an option), coconut milk (I use for making chai coconut lattes or smoothies), green tea (I usually make at home from tea bags, but having a cold bottle to grab on the go is handy when you're in a hurry). Mexican food, especially tacos with tortilla chips, pico de gallo and guacamole are always a favorite at our house. I limit my dairy intake since it triggers cystic acne on my cheeks. But I've found I do much better with dairy products that are made outside the USA. (My guess is, there are too many hormones in our dairy in the States). A few other regular favorites that weren't in our fridge at the time of filming: Tofu, asparagus, lemons, baby bok choy, cucumber, broccoli, spinach, kale, mixed salad greens... Though the bag of stir-fry veggies has some of those already. Neither Michael or I follow any kind of "diet", we just do our best to eat clean, fresh foods 90% of the time and the other 10% is whatever other treats we want. Let stand for 1 minute. 7) Carefully open the zipper. 8) If not sufficiently cooked reseal the bag and continue cooking in 30 second increments. 9) Place omelette onto a serving plate using a spatula.
